Ecclesiastes teaches us what life is like when lived apart from a relationship with God. The writer explains and argues through his research project that life lived without God will leave us frustrated, empty, and purposeless.  However (on the flip-side) it is possible to live a life of purpose, joy, contentment, and satisfaction in God. What would that life look like? Well, it would not look like Solomon's life. Solomon is not holding up his life as a pattern to follow. Solomon actually uses himself, on occasion, as a negative example of frustration and emptiness. If we could embody the truths Solomon is teaching us about living life in perfect relation to God within a fallen world - it would look like Jesus.  Jesus (particularly during His earthly ministry) is the ultimate example of an Ecclesiastes life.
